This recipe is truly one of my favourite breakfasts (it’s also great as a snack)! I love the crispy freshness of the raw fruit/veg, the crunchiness of the seeds, nuts and coconut, and the creaminess of the yoghurt. Best of all, you only have to make up the crunch mix once and you get 5 to 10 meals out of that. All you have to do is grate 1 apple and 1 small carrot, throw a few tablespoons of the crunch mix and a tablespoon or two of yoghurt and a handful of berries and you’re good to go. Couldn’t be simpler than that!

Ingredients
CRUNCH MIX (store this in a jar and just use 2 – 4 heaped tablespoons each serve)
- 80g Linseeds
- 40g Pumpkin seeds
- 3 tablespoons sesame seeds
- 100g almonds, roughly chopped
- 90g shredded coconut
- 40g Cacao Nibs (optional)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla powder (optional)
APPLE-CARROT MIX
- 1 green apple, cored and grated
- 1 small carrot, peeled and grated
- small handful of berries (optional)
- couple tablespoons of plain yoghurt
Method
- In a jar with screw on lid fill crunch mix ingredients and shake to mix.
- In a bowl place all Apple-Carrot Mix ingredients except yoghurt and toss mixing around evenly.
- Add two to four tablespoons of the Crunch mix and mix again.
- Add yoghurt and mix. Serve.
